Hola!!!

While it was a super productive weekend, it wasn't a Cajun weekend :( Sadly, we were so busy prepping the new Mild Bill's store that I didn't have enough time to make some of the dishes Gary and I had in New Orleans. Still...I managed to make a damn good pot roast Saturday (well, technically the crock pot did it) and yesterday, I made a Green Chile Chicken Casserole. Below is the recipe - Gary LOVED it!!

Cadillac Cowgirl Green Chili Casserole

1 Rotisserie Chicken, meat removed and chopped
2 Tbsp Butter
1/2 Medium Red Onion, chopped
1 7 oz Can Chopped Green Chiles, undrained
1 4 oz Bar Cream Cheese, softened
1 5 oz Can Condensed Milk
1 14.5 oz Can Hatch Green Chile Enchilada Sauce
12 Corn Tortillas
8 oz Bag Shredded Cheddar Cheese
1 tsp Each Salt, Garlic Powder and Cumin....Mild Bill's of course!

Preheat the oven to 375 degrees and grease a 9x9 baking dish; set aside. In a large skillet or dutch oven, melt the butter and add the red onions and green chiles. Saute over medium low heat until the onion starts to turn translucent. Add the cream cheese and stir into the onion and green chili mixture so that it will begin to melt. Once melted, add the chicken, the condensed milk and the salt, garlic powder and cumin. Stir to combine and allow to simmer so that some of the liquid evaporates, about 10 minutes. Remove from heat and begin to assemble the casserole by pouring enough of the Enchilada Sauce in the bottom of your pan to form a thin layer. Lay four corn tortillas across the bottom and top with grated cheese, the chicken mixture, more sauce and top with four more corn tortillas. Repeat by sprinkling more cheese and the remaining chicken mixture over the top of the tortillas and top with the last four corn tortillas. Pour the remaining sauce and sprinkle the rest of the cheese on top. Cover and bake for 25 minutes. Remove the cover and finished baking until the top layer of cheese is melted and bubbling. Allow to sit for 5-10 minutes before cutting and serving. This is great topped with sour cream!

Paige has been wearing me out for two weeks wanting to paint at the store. It was finally time for her to paint Saturday and she lasted about 15 minutes. On top of that, she freaked out because she got paint on herself and it wouldn't come off. She did a very good job :)

This is all I have today. I'm tired for some reason, and beatdown from a typical Monday!! I'll be back tomorrow...hopefully full of my usual piss and vinegar.
