The Return of Conversations with Paige, FOOD, 10th Annual Gingerbread House CCO and Other Ramblings......

Good Morning!!! Is everyone ready for the storm of the century??? You want to know how I get ready? I take my camera and go hang out at Walmart and take pictures of everyone buying bottled water, firewood, Hamburger Helper and frozen pizzas. Oh - and the line for GAS!!! You would think that we are going to be iced and snowed in for WEEKS! I did my Walmart shopping early yesterday morning and bought NORMAL things...LOL!

I had so much fun at Rahr Brewery Saturday - especially since I won. And beat my husband! And went to Joe T's afterwards!! There were 66 cooks Saturday and it was HOT! Thank GOD I had a tank top on underneath my shirt - I was able to strip down to it and keep cool! My tattoos didn't think it was too funny. I didn't have any sunscreen to put on my arms and back so my cowgirl, and my skulls, and my peacock, and my owls and butterflies got a little pink. Ooops! They survived....I'm getting them ready for the river this summer. Hell Yeah! I don't have my list of winners with me, but Steph Brockman got 2nd, Joel Sexton got 3rd, Nancy Hewlett, Bill Lester, Beth Moon, Ron Barnes, Kenny Short, Joe McCarty and Lisa Brown all placed. As I mentioned, we went to Joe T's afterwards and had Margaritas while we were standing in line so we were pretty happy by the time we sat down (not to mention we'd been drinking beer all day!) and the food tasted just like it always does - DELICIOUS! By the time I got home, I was BEAT and ready for bed. I also missed my puppies - so we had lots of private time!

Any news from the CASI BOD meeting that took place this past weekend? I wisely stayed away so as not to make my blood pressure spike unnecessarily. I recently resigned from the committee I've been serving. I felt that as an owner of a business that sponsors CASI and is so closely linked to CASI (Mild Bills not T & B), it was just too much of a conflict of interest. Secondly, I'm sick of listening to bickering for the sake of bickering. And third, I really feel like these committees are a way to keep arguing. If we have rules, then why do we have a rules committee to decide if a rule was broken? CASI has policies in place; why do we keep forming committees (with board members on it) to pontificate and argue about the policies. Is it because people wouldn't have anything to do if they couldn't argue about CASI? Until CASI realizes that it has too many cooks in the kitchen (pun intended) nothing is ever going to be solved; or change, or improve.

Okay, enough for today. Like I said, no reason to rile me up if you don't have to.

Back to my dogs. Eddie is a humping machine. He will not leave Waylon alone. They both take turns as the "humper" and "humpee", but I'm telling you, Eddie is ready to reproduce. So, Paige and I are in the bathroom getting ready for bed last night and Eddie is all over Waylon. The ensuing conversation goes a little something like this:

Me: Paige, quit watching them. Don't give them anymore attention. Maybe they'll stop.
Paige: But it's just so funny. Look at Eddie on Waylon's back. He's like, riding him or something. (or as Paige with no top teeth says, "sumfing")
Me: I know, I know. Just IGNORE them.
Paige: But I can't. They follow me around and do it in front of me. Mommy, why do they do that to each other?
Me: (clearly exasperated at my dogs who won't stop humping and my child who is fascinated by it) Because they're friends. They love each other; that's how they play.
Paige: Can I start playing with my friends like that? So they'll know I love them?
Me: NO! NO, NO, NO! GO! Out, out, out of the bathroom all of you!!!

Please, I beg of all my friends. Should you see my child humping another kid in an effort to show affection, please yank her off of said kid and bring her to me so that I can lock her up until she's 21 :) Thank you!

The 10th Annual Gingerbread House CCO is taking place this weekend at the Ellis County Expo Center. Gates open at 10 am Friday morning for early arrivals. Plenty of dry camping/RV parking available; no hook ups. Friday night stew and cornbread dinner, plus FREE BEER, for the cooks along with an 8 pm chili turn in (grind only). Saturday we will have CASI Chili, Junior Chili, Novice/Local Chili and Beans - all turn in at 1pm (grind only). All chili cooks will receive free admission to the benefit barn dance Saturday evening. Sunday's turn in is at noon (grind only), giving everyone plenty of time to get home for the Super Bowl. We will have a 1st Place Stove Friday and Saturday, as well as a raffle stove on Saturday and 10 Liquor Baskets and a Starbucks Gift Basket to auction off. This is a fantastic cook off to get your points towards Terlingua! Please bring throwdown chili for the concession stand and your own tables. Indoor cooking is available as well!

I'm going to try my hand at Chicken Piccata this week - I'll share the recipe if all goes well :) I also bought ingredients for Spaghetti and Meatballs. I'm going to make my meatballs a little differently than usual, so we'll see.....

A Correction To The Pot Pie.....

I forgot to tell ya'll that I was told that the pot pie I made was better than the pot pies served in the Richardson, Ferris and Highland Park Jails.

If that doesn't entice you to prepare this lovely meal for your family, I don't know what will. Knowing that you can make a pot pie better than the Texas Dept. of Corrections should send you speeding to the store for the ingredients :)

Yes, I Suck at Blogging, Food of Love, and The Juicy

Good Monday Morning! I'm willing today to be better than last Friday, which sucked ass. I was supposed to get a sonogram this morning, but I decided that I'd rather go to the office and expose myself to the bullshit at T & B than expose myself to my doctor. Go figure. I've also started crawfishing on my insistence that my innards be ripped out. I'm just weird like that.

Paige and I cooked chili this weekend in Denton at Fosters and had a GREAT time! The weather was gorgeous, the shopping was great and it was just a fun time! Below are the results:

Can I get a Hell Yeah for the Ellis Co folks that placed??? I was so tickled for Ron Baker.

I felt like I needed a date night Saturday, but I quickly changed my mind the longer I drove. Paige and I stopped at Eatzi's and got a rotisserie chicken dinner for all of us. It was delicious and I was in bed by 9 pm. I drank some wine, watched a little SATC and relaxed. Sunday was a good day, too. I got up, made breakfast for the family, cleaned my house, did laundry, got the Christmas tree out of the house and stuff off of the porch, watched the Packers beat the Bears, the Steelers beat the Jets and prepared, for the very first time, a homemade pot pie. A pot pie of love, actually. It was so easy and it came out perfect. I had leftover sauteed green beans and broccoli from Eatzi's to serve with it. Below is the recipe:

Cadillac Cowgirl Beef and Mushroom Pot Pie

2 9" Pie Crusts
1 1/4 lb Chuck Roast, diced into bite size pieces
1 Can Cream of Mushroom Soup
1/4 - 1/2 Cup Milk
1 Package Onion Soup Mix (or any variation, like beefy mushroom, etc)
1/4 Cup Each Diced Potatoes, Carrots, Mushrooms and Onions
Red Wine (to drink and cook with!)
1 Tbsp Vegetable Oil
1 Egg, beaten, plus a Tbsp of water
Salt and Pepper

Preheat the oven to 375. Spray and flour the bottom and sides of a 9x9 pie plate or 9x9 square casserole pan and lay one of the pie crusts in the bottom and press up about halfway up the side; place it in the oven and allow the bottom crust to prebake for 5-7 minutes or until lightly browned on the bottom; set aside. In a large skillet, heat the vegetable oil and brown the bite size pieces of chuck roast; salt and pepper them and set them aside to drain. In the same skillet, add the diced veggies and use some of the red wine to deglaze the bottom of the skillet. Turn the heat to low, lightly salt and pepper the veggies and saute them over low heat until they are tender. In the meantime, add the mushroom soup, the package of onion soup mix, 1/4 cup of milk, and using the mushroom soup can, 1/4 can of red wine. Heat until bubbly; then add the sauteed veggies to the mix and combine. If the mixture looks a little too thick, add a bit more milk - you don't want it thin and runny though. Spread the diced chuck roast on the prebaked pie crust and then add the soup and vegetable mix, stir to combine. Lay the remaining pie crust directly over the top of the meat, soup and veggies and press the crust along the sides. Brush the top with beaten egg and using a fork, poke holes in the top crust to allow the steam to escape. Bake at 375 for 30 minutes or until the top crust is brown and the filling is bubbly. Allow to sit for a few minutes, then serve! Enjoy your Food of Love!!

I know I've fallen down on the blogging job - there's just been so much going on AND it's year end. I will endeavor to be better this week :)

As I mentioned earlier, Paige went to Denton with me Saturday and we had lots of MommyBaby private time. She started her morning out with a Caramel Creme Frapuccinno and a donut, because I like to see my kid cracked out on sugar. She also tried on almost everything in the kids department at Fosters as she didn't want anything that didn't make her look "hot". She also picked out a pair of pink and black Zebra boots that she wore yesterday to Walmart. She went with her dad, who wore overalls. I stayed home and drank like a smart person :) She also doesn't understand why she should have to use her money at Game Stop when she's with her dad and he has money. She's spoiled rotten....just as she should be!

Rainy Sunday....My Kinda Day.....

It has been raining in Ellis Co. since early this morning and I love it. Granted, my yard is under water, but it's peaceful and quiet and I'm enjoying it. I've got a pork loin in the oven and if all turns out well, I'm going to share the recipe. I seared the pork loin in my dutch oven, threw in cut up new potatoes, carrots and pearl onions and then poured a mixture of honey, Worcestershire sauce, stone ground mustard and horseradish over it. I'm going to cook it in the oven for a few hours and then serve it with homemade yeast rolls and sauteed spinach. The season premiere of Big Love is tonight so I hope we can eat dinner and get settled in just in time. Gary bought everything to make hot fudge sundaes tonight, too. Yum!

Gary, Mark, Vicki and I cooked chili yesterday in Plano. It wasn't looking good there for awhile. Gary and I forgot his chili pot and my bean pot. I set my propane holder thingy on fire and scorched my chili. It was turning out to be one of "those" days. But I think Gary and his lucky weenie turned it around for us. I bet you are scared to ask, right? I would be too...but it's not that bad. He just took a hot dog and stuck it in the fly of his pants and roasted it over the fire we had going. Oh, and he chased Neta Rohr with it....nothing too perverted. Hey - it was typical chili cook off behavior! Here are the winners of yesterday's cook off:

Congrats to everyone who placed! It was cold and yucky but we all had a good time! Courtney cooked for the first time in ages and got final table - Hell Yeah! She and I left early, went to Wing Stop and got wings for the BIG GAME! It was a divided household yesterday....love for Ray Lewis, love for Troy Polomalu....there were some tense moments. My neighbors are HUGE Steeler fans and they had a houseful yesterday. Thank God they won...I would have had to call for a welfare check if they hadn't :)

Tomorrow I have to really get down to business on closing our year and getting everything to the CPA. Once that is done, I'll be concentrating on organizing all of my plans and ideas for Mild Bills and spending more time in Bulverde until the big move to Ellis Co.! On top of all that, I have to get ready for our cook off in a few weeks. This is the 10th Annual Gingerbread House CCO and we've got liquor baskets to raffle, a stove and of course a great cook off to come to for the weekend!

Will This $%*@!$%* Week Ever Be Over?

When I listen to myself gripe and read some of my blog and FB posts, I know I sound like a negative, bitchy, bitter old person...(sound familiar??). I'm not. I promise. I am actually happy, I love my life (maybe not my employees), I have a great family, great friends, a Juicy of Love and Deliciousness, crazy dogs and a good marriage. Now that I've reaffirmed that I'm not always bitching and moaning about something and that I am a happy person, let me really bitch about something:

My check card was hacked. It has done nothing but cause problems since Saturday. I've had all kinds of charges hit our account. To top it off, my computer has been hacked as well and I believe it has spilled over into our server and Jeannie's computer. All week I've dealt with this bullshit and I'm ready for this friggin week to be over with. I see a drunk coming on.

Additionally, I have had a bladder AND kidney infection. I know that borders on TMI, but you CANNOT imagine the pain associated with a kidney infection. I wanted to kill someone Tuesday and yesterday. The way this week is going, I might still.....

But! I have found time to make something delicious with Mild Bill's Jalapeno Relish. The next time you make tuna salad, try this recipe:


Cadillac Cowgirl Spicy Tuna Salad

1 12 oz Can Albacore Tuna
1/4 Cup Mayo
2 Hard Boiled Eggs, diced
1 Tbsp Mild Bill's Jalapeno Relish
Salt and Pepper to taste

Drain the tuna and add to a bowl. Combine the tuna with the mayo, diced eggs and relish. Salt and pepper to taste. You can add more relish for a bit more kick. Serve it on crackers, toasted bread or by itself. You can also make a tuna melt out of it by adding a little Cheddar or Muenster cheese and grilling it in a skillet. Hell Yeah!

So, the highlight of my week has been making spicy tuna salad. Oh, and I watched "It's Complicated" last night and it was very funny. There...that's two things :)

I'm going to go to work now so that my computer can continue to be hacked by some dipshit in Switzerland with no life.

Give Peas A Chance......

When I wasn't wallowing in my bottle of wine and pajamas, I actually prepared some kick ass food over the weekend. I also straightened up and cleaned out mine and Gary's closet and facilitated a laundry intervention. Even when I'm a barely dressed wino, I still get things done :)

I am a fan of the pea...black eye, purple hull, green and my all time favorite: Cream peas. Summer is best for fresh cream peas, so during the other months of the year, I slum with black eye peas. I made a pot yesterday to go with the chicken fried steak and mashed potatoes. I would share the recipe for the chicken fried steak, but I left it at home and I'm still debating whether or not I want to tweak it a few more times before I post it. The peas are below....give 'em a chance, will you?!?!?!?

Cadillac Cowgirl Black Eye Peas

1 lb dried black eye peas
6 oz salt pork, chopped into bite size pieces
1 small onion, chopped
1 tsp beef granules
1 tsp pepper
Salt to taste
8 cups of water

In a large dutch oven or soup pot, cover the peas with water and parboil them for 15 minutes; drain and set aside. In the same pot, brown the salt pork over medium heat and add the chopped onions. Continue cooking over medium low heat for 5 minutes and add 4 cups of water to help deglaze the bottom of the pan, if needed. Then add the peas, beef granules, pepper and the rest of the water. Bring to a boil, cover and allow to simmer over medium heat for 45 minutes. Turn the heat to medium low and let them finish cooking until tender. The broth will thicken up a little, but it won't be very thick. Taste for salt - depending on your preference, you may or may not want to add any. Enjoy!

Gary and Tyler built a playhouse sized doghouse for the hounds Saturday because of the upcoming cold weather. They each have their own doghouse now, but Gary decided to build them a heated doghouse! They all got in it Saturday night with the heat on and slept comfortably. They've come out a few times to use the bathroom and eat, but overall, they're quite comfy in their ultra-fancy heated doghouse.

Don't know what I'll make for dinner this evening. We've got leftovers and that may be what Gary gets to eat! I'm not sure I feel like cooking this evening....

Tomato Soup, Beans, Wine, Dogs, Marriage, and Other Random Subjects

First of all, I'm not apologizing today for being a bad blogger. Last week was not a good week and there was just no need to blog. Gary and I are still in shock and disbelief at Uncle Larry's passing and combined with the work week from hell, I wasn't feeling it. Gary visited with Theresa yesterday and she's holding up okay, still in a daze and still terribly sad. My heart really breaks for her, Tracie and Misty. If there was anything Larry loved (besides Crown), it was his grandbabies and it just makes me so sad that he will not be here to meet Misty's baby. Life is short...and cruel...and weird.

Last week I made homemade tomato soup and today I've made a pot of beans. Below are the recipes:

Cadillac Cowgirl Creamy Tomato Soup

2 28 oz Cans Pureed Tomatoes (I used Hunt's)
3 tsp Sugar
1 1/2 tsp Fresh Cracked Black Pepper
1 Tsp Salt
1 Garlic Clove, minced
1/2 Cup Heavy Cream
1 Tbsp Olive Oil

In a 5 quart soup pot, saute the minced garlic in the olive oil over low heat for five minutes. Add the tomatoes, sugar, salt and pepper and simmer at a medium low heat for 10 minutes. Add the cream, turn the heat to low and continue to simmer for 20 minutes until heated through and blended well. Serve with french bread and a salad.

Cadillac Cowgirl Pinto Beans

1 lb Bag Dry Pinto Beans
1 Small Onion, chopped
1 Bone in Ham Steak (Cooks or Smithfield Brand)
3 1/2 Tbsp Bolner's Fiesta Pinto Bean Seasoning
1 tsp Salt
26 oz Swansons Chicken Stock
4 Cups Water

In a large soup pot, par boil the beans for 20 minutes; drain and set aside. In the soup pot, sear the ham steak and add the chopped onions. Pour in the chicken broth and deglaze the bottom of the pot if needed. Add the beans, pinto bean seasoning, salt, pepper and four cups of water. Bring to a boil, cover and turn the heat down to medium. Cook for one hour. Turn to low and simmer until beans are tender. Should you need more liquid, add a little water at a time. Check and adjust seasoning if needed. Serve with cornbread.

My dogs are morons. Eddie weighs 10 pounds. He regularly tries to kick the asses of the larger dogs that weigh in at 130 and 110, respectively. Today, Eddie bit off more than he could chew and I believe the experience has humbled him. NO....I am not an advocate of dog violence. Nor do I like for my dogs to get into domestics. I'm merely pointing out that Eddie likes to stir shit and today no one was in the mood to take it. He is in his cozy cave taking a nap. He was not harmed in any way.

Just in case anyone else is on the Switzerland dating site, it's not me. My debit card was hacked and some lonely skank is looking for love in the Swiss Alps. Whatever.

I really don't have anything CASI related to flip out about. Do I think that CASI is still mired in a bureaucratic self important nightmare? Yes. Do I think that CASI will ever change? NO!!!! But....what I am supposed to do? You know, the definition of insanity is doing the same thing over and over again and expecting different results. So, you know...I'm just going to shut up for now.

Speaking of insanity...marriage. That's all I'm going to say.

Can someone please tell me why the Seahawks are beating the Saints? If that isn't a WTF question then I don't know what is!!!!

The girls and I are going to go to Mass in the morning. Zoe is looking forward to it and maybe we'll even get up early enough for them to go to Sunday school. I promised her I'd make chicken fried steak tomorrow night. I don't know if I'll be able to share that recipe. That's always a messy beatdown kind of meal.

Can I just say that I totally cannot believe that I own Mild Bills now? I am so excited and nervous and pumped up and every other emotion that goes along with starting a new chapter in your life. This is going to be the most amazing adventure ever. I'm so friggin excited!!!!

I've been doing my best to support a CASI sponsor, Woodbridge Wine. Their Pinot Noir is delicious and my MIL bought me a very large bottle of the Cab. I love it and I'm really enjoying their wines. I'm still a Zinfandel homer and I love, love, love Seghesio and Mauritson wineries, but the Woodbridge is pretty kick ass :)

Holy Shit!! I was just informed that Coal Miner's Daughter will be on at 6:30. I'm outta here bitches!!!!!

Greetings

Good Sunday morning. I've had a hard time saying "happy new year" knowing what a crappy way 2010 ended and 2011 is starting off. Today we all begin to say goodbye to Uncle Larry and I can't imagine what this is like for Theresa, her girls, son in laws and grand kids. I hope that God watches over them and comforts them now more than ever. This is so hard for everyone and I know that as sad as so many of us are, our main focus is on Theresa and supporting her and being there for her and the family. It's just so surreal....it's like it hasn't really sunk in for a lot of us.

So, we had a low key NYE at the house. I made delicious enchiladas, Courtney and I battled one another for intellectual superiority and drank too much wine :) We went to Kary's for our annual NY Day feast yesterday and ate TOO MUCH FOOD!!! It was sooooo goooood and I was miserable when I left. I had to stop and get coffee so that I could stay awake on the drive home. We ended up at the hall last night with Mark and Vicki and had a toast to Uncle Larry, some good laughs, a lost diamond ring (mine) and a Jack in the Box run! I found my ring - it had fallen in Courtney's purse. The person who dropped it was more freaked out than I was....I guess he figured Gary was going to go batshit crazy....LOL!!

My kitchen is a disaster and I have no motivation to pick it up. I've also got Christmas stuff in my bathroom that I've GOT to put up...again, no will to do so. Today is the day, though. I REFUSE to start off the week with a messy kitchen. I am okay with a messy bathroom and messy laundry room, but the rest of the house has to stay clean. I'm weird like that. The Saints are about to play Tampa Bay. Last week when the Saints played the Falcons, I was in awe of Drew Brees' attitude and body language. The guy is 5'9", but he carries himself with so much confidence and his body language just screams, "you won't beat me." I've always liked him and the Saints, but I was so impressed with him last week. I hope they beat the shit out of Tampa Bay. And the Steelers play the Browns at the same time...I'm going to be flipping back and forth. I love the Steelers, but I also love Colt McCoy. I hope it's not a blowout.

I have a few recipes to share. I made a quick version of my chicken enchiladas Friday night. I used precooked chicken, stacked the tortillas instead of rolling them and used the Hatch green chile sauce. They were absolutely delicious. I also had them for breakfast this morning with a fried egg over the top. Hell yeah!! I made cabbage yesterday for our lunch at Kary's and I loved how it came out. The cabbage is great as a side dish or you can use it for corned beef or even bratwurst. Yum!!

Cadillac Cowgirl Chicken Enchilada Casserole

18 Corn Tortillas
1 lb Precooked Chicken Strips, chopped (Tyson, etc. I used the fajita flavored)
8 oz Cream Cheese, softened
1/4 Cup Chopped Onion
1 4 oz Can Chopped Green Chiles
1 Tbsp Butter
1 Can Hatch Green Chile Enchilada Sauce
1 Tsp Fiesta Enchilada Seasoning
Salt and Pepper to taste
Mexican Crema (or sour cream if you can't find it)
1 Bag Shredded Monterrey Jack Cheese or any Mexican Cheese Blend

Spray an 11x9 aluminum pan with non stick spray and preheat the oven to 400. In a large non stick skillet, melt the butter and saute the onions over medium low until tender. Once the onions are soft, add the green chiles, chopped chicken, cream cheese, enchilada seasoning and salt and pepper. Stir to combine and continue cooking over low heat until heated through and the cream cheese is completely melted; set aside. Layer six corn tortillas in the bottom of the aluminum pan. Spread 1/2 of the chicken mixture, 1/3 of the cheese and drizzle the Mexican Crema over the top. Layer six more corn tortillas over the top and repeat. Top with the remaining six tortillas, pour the green chile sauce over the top and sprinkle with the remaining shredded cheese. Cover and cook for 15 minutes. Uncover and cook until the cheese on top is melted and bubbly; remove from oven. Drizzle a lttle crema over the top, cut into squares and serve alongside beans and rice.

Cadillac Cowgirl Cabbage

1 Head of Cabbage, cored and chopped (don't chop it too small)
1 Small Onion, chopped
6 Slices of Bacon, chopped
2 Tbsp Apple Cider Vinegar
1 Tbsp Vegetable Oil
Salt and Pepper to taste

In a large dutch oven, brown the chopped bacon in the veggie oil until almost crisp. Add the chopped onion and saute over medium low heat for about 5 minutes. When the onions start to brown a little bit, add the 2 Tbsp of apple cider vinegar to help deglaze the bottom of the pan. Scrape all of the brown bits off the bottom and add the cabbage. Turn the cabbage to coat and cover. Turn the heat to medium and allow the cabbage to wilt and cook in the bacon grease/apple cider vinegar mixture. Take the lid off every few minutes to coat the cabbage and mix it around so that all of it has a chance to wilt down and cook. Turn the heat to low and allow it to simmer for 20 minutes. The cabbage should be tender and still have it's shape; you don't want it to be mush! Enjoy!!

My husband and kids have gone to see True Grit. It's just me and the puppies here at the house and I know that they could care less if I clean the kitchen. They would prefer that I get in my chair so that they can get in my lap and nap. Eddie is in his cozy cave and Waylon is running around like he just hit the pipe. Fred's hair is starting to grow back - Yay!
