Smoked Salmon Frittata and Slow Cooker Roast

Good Morning!

Last night I made Ina Garten's Smoked Salmon Frittata. I made a few changes and it was still delicious. This is perfect for breakfast, lunch or dinner and it's also great if you are low carbing or no carbing it :). I also got a roast ready to cook in the slow cooker today while I'm at work! Recipes below:

Smoked Salmon Frittata

1/2 of medium red onion, diced
1 1/2 Tbsp butter
12 large eggs
1 cup heavy cream
4 oz goat cheese, crumbled
1/2 lb smoked salmon, chopped
3 green onions, white and light green parts, chopped
3/4 Tbsp dried dill weed
1 tsp salt
1 tsp pepper

Preheat the oven to 350 degrees. Saute the red onion and butter in a 10 inch oven proof skillet over medium low heat until tender. Meanwhile, in a large bowl, beat the eggs. Add the cream, goat cheese, salmon, green onions, dill, salt and pepper; stir to combine. Pour the mixture over the onions and place the skillet in the oven. Bake the frittata for 50-55 minutes until puffy and golden brown. You also want to make sure a knife inserted in the middle of it comes out clean, too. (That way you know it's done!) Serve warm with fruit, soup and/or salad. If you don't like dill, omit it and use parsley! I served this with roasted new potatoes. They are the easiest side dish to make. Quarter 3-4 large new potatoes, drizzle with olive oil, salt and pepper and roast in the oven along with the frittata. Super easy!

Cadillac Cowgirl Slow Cooker Roast

1 2 1/2-3 lb chuck roast
2 large russet potatoes, quartered
1 16 oz bag of baby carrots
1 large onion, quartered
2 1.25 oz packages of onion soup mix (they come two to a box)
1/2 tsp each salt, pepper, onion and garlic powder
1/4 cup water

In a 5-6 qt slow cooker (with a slow cooker liner because they rock!), layer the potatoes, onions and carrots; sprinkle the contents of ONE bag of onion soup mix over the veggies. Lay the roast on top and sprinkle the other bag of onion soup mix over the top of it along with the salt, pepper, onion and garlic powder. Pour the water around the veggies, cover and cook on low for 8-9 hours. Come home and dinner is ready except for a few side dishes! (If you're me, that consists of instant mashed potatoes, corn and green beans!!)

Have a great day! I am wavering on whether or not I want to delve into the Regional Referee issue that is quickly becoming a RR problem in the N Texas area. I'm torn between flipping out now or at the GP Meeting. If any of you who read this have an opinion either way regarding how the areas are being split up and the response (that has been iffy at times)from the individual re-zoning the areas, let me know what you think about how it's being handled.
