Oh Wait - I Forgot the Good Stuff While I Was On My Tirade....

Saturday, we prepared the Champagne of Steaks. See recipe below:

Cadillac Cowgirl Champagne of Steaks

4 Ribeyes (medium to thick cut, not the thin ones)
2 Miller High Lifes "The Champagne of Beers"!!
1/4 Bottle Dale's Marinade
2 Tbsp Obie-Q Grilling Seasoning

Combine all in a large Ziploc bag and marinate for 3-4 hours. Grill to desired preference (please don't tell me if you're a well done-er...we won't be able to be friends anymore) and serve with Cilantro Lime Butter. Recipe below. Enjoy!!

Cilantro Lime Butter

1 Stick of Butter, softened
2 Tbsp Cilantro, chopped
1 Jalapeno, minced and seeds removed
Zest and Juice of one small Lime
Salt and Pepper to taste

Combine the above in a small bowl, cover and chill until ready to use. This is so versatile - add a dollop to your steak, corn on the cob, or even rice! We used it the next night for our chicken fajitas. Yum!!!

Cadillac Cowgirl Skillet Potatoes

1 lb mini Butter Golds or Fingerling Potatoes
4 Pieces Slab Cut Bacon, diced
1 Small Onion, diced
2 Garlic Cloves, diced
2 Tbsp Each Fresh Rosemary and Thyme, chopped
1/2 tsp Telicherry Pepper
Grated Parmesan or Reggiano (or both!!) Cheese

Bring a large pot of salted water to a boil; when boiling, add the potatoes and cook until just fork tender. Meanwhile, heat a cast iron skillet and brown the bacon. Once it begins to brown, add the onion and cook over medium low heat. When the onion begins to turn translucent, add the garlic and continue to cook over low heat until the onions are tender. When the potatoes are fork tender, drain well and add to the cast iron skillet. Combine the potatoes with the bacon, onion and garlic and toss to coat. Sprinkle with the rosemary, thyme and telicherry pepper and finish off in a 350 degree oven for 15 minutes. Sprinkle the potatoes with grated Parmesan and/or Reggiano Cheese and serve. Viola!!

No matter how bad my life might suck at a particular given moment, I can still cook like a mofo. And....I did not gain any weight over the past few weeks. I didn't lose any, either...but hey - if that number stayed the same after the past few weeks of hell, then that's a win, baby!

Tuesday...Doesn't Suck as Bad as Monday, But It Ain't Great.....

I have two Xanax left and then that's it. Dr. Redington won't give me a prescription for them and it just really pisses me off. I am a walking panic attack and since staying drunk all day is sort of out of the question, I'm basically a nervous wreck. I'm tired of T&B; I'm tired of the BS going on around here; I'm tired of this place being in limbo and I'm sick of Gary and I being the only ones who give a shit, and can't do what we know is best because we are in business with someone who lives in an alternate reality. Whew. I can't believe I said all of that.

I was once told that "my need for autonomy is off the charts". She wasn't lying. And it is...but I do just fine with Gary as a business partner (because we agree on how to run a business). It's just hard when you get to a point that you realize you have major philosophical differences with the other partner. I don't need to champion every dollar I put in this place and make sure someone knows about it. It's what you're SUPPOSED to do when you own your own business. This place is mine and Gary's livelihood and if someone thinks they can threaten that or take it away from us, they're WRONG. I've been invested in this place to the point it's made me sick and nothing is more insulting than someone who hasn't been involved pointing fingers and criticizing the efforts of those who have been left to deal with other people's messes. I've done what I can to keep T&B in business since we had a job go very, very bad two years ago and it's been mine and Gary's burden to bear - no one else wants to deal with the shit that goes on around here. As my dad said the other day, it's hand to hand combat every day at T&B Demolition. He hit the nail on the head.

Knock me down and I'll get right back up. I'll come up swinging if I have to.

TGIMFF

This has been one of the worst weeks in recent memory. I'm hoping to wrap up some things today and be able to close one of the last chapters in my T&B Demolition book. I've made the decision to leave July 31st and I've got a lot to do between now and then. I'm so excited and nervous about the next stage of mine and Gary's lives and all of the joy Mild Bill's is going to bring us. I may be scarce for the next week or so, so please....spread some joy and kindness in my absence and feel free to send your two cents to me to post on my blog. It really takes the pressure off of a girl :)

Again...I need to publicly tell my hubby how much I love him...and how much I appreciate all he does for me. He's had my back the last month and I don't think I would have survived without him...or my Xanax and Hydrocodone :) I've always had an ambivalent attitude towards marriage (it really is just a piece of paper), but the past few weeks have taught me alot about love and marriage and what it means to stand by someone through thick and thin. Between him and my family, I don't know where I'd be without them.

Enough sentimental bullshit for now. Have a great weekend, stay cool and keep it real.

Well, well, well, it has been another interesting week of discussions among CASI members. I do believe that open discussions on various issues that affect CASI members, as long as they don't get personal, are healthy for the organization. It is encouraging to hear from the many voices of CASI. I can assure you,that while they don't participate in the discussions, the Directors are listening.

 

There are a couple of things I would like to clear up from my blog post of  last week. I want to be perfectly clear, I did not say that pod newsletters were insignificant. As a former newsletter editor and publisher, I am extremely aware of the effort it takes to produce a document your pod members want to read month after month. As a past Great Pepper, I am also very cognizant of the importance of a newsletter to the pod's success.

What I did say, was that the newsletter contest was insignificant. It has nothing to do with the quality of the entries (they were very deserving), but with the quantity of entries. When only two out of 71 pods choose to enter the contest, they deem it insignificant. In baseball, a .333 batting average is considered good, not great, good. If we had 24 pods enter the contest, it would be so much more meaningful.

 

Many people mentioned the "cancellation" of the newsletter contest. The contest was not canceled. Unlike TICC or the GPM, the newsletter contest is not a recurring event. It takes, each year, an action by the Board to have a contest. This year the Board apparently (I was not at the meeting) chose not to take the action. Based on the participation, I would agree with that non-action.

Several writers mentioned canceling the contest "in the middle of the season." Does that mean to say they would not have had newsletters if they knew earlier there would be no contest? I hope not.

 

This discussion has been good for the organization. Members should feel free, and have a forum, to voice their views without being attacked or chastised. We all have opinions, and we don't all agree, but let's hear what you have to say.

As you attend your August pod meetings, please take a moment to reflect on what you want from CASI going forward. If you will email me any thoughts and recommendations I would appreciate it greatly. I am running for director to be a positive influence and I need to know what ails you. Trust me, there are no sacred cows in this herd. Anything is fair game so let me know. I will formulate the best program I can put forth and try to look at both sides of any argument. We must openly discuss conflict and prepare a game plan for our future. I just get the feeling that our morale is not what I think it can be. My email is jezell8642@aol.com. I will not disclose any names unless you specifically want me to do that.
There is not adequate time at the Great Pepper Meeting to discuss what we have not given careful thought to. Let's start thinking now.

Because My Smart Ass Self Has Taken Over My Well Behaved Self...Oh Yeah....And It's Fun Too......

I'm sorry, but I just can't help myself this morning. First of all - Robert Talavera's post on the ED's Blog was FANTASTIC. I love it.

So, keeping with two of the themes of this newsletter dispute - one being that not enough newsletters have been submitted in July to satisfy the Board and keep the contest going.....

And, cancelling a contest in July when submissions aren't due until October 1st.....

Does this mean the Board might cancel the GPM in September based on the number of registrations accounted for in July?

As of last Thursday, only 18 of the 71 pods had registered.....and they aren't due until August 15th.

If we use the same logic........Just sayin........

Monday....The Most Hated Day in The Galaxy

Did everyone have a good weekend? I did. Here are a few of my highlights:

Campisi's Egyptian Room Friday night.

India Palace and Central Market on Saturday.

Straightened hair AND new feathers for my hair!! Woo hoo!!!!

So, yeah...Campisis...one of my favorites. I love going there. It's just so cool and mafioso-ish (so not a word) and I love the history. Besides, strippers still hang out there! Gary had chicken parmigiana and I had the combo plate. We took most of it home and he had it for lunch Saturday. I also love it because it isn't overpriced and you can have a few glasses of good wine and not spend an assload of money. Saturday, I got up (late) and went to see the other man in my life, Jeff Morgan of One Fine Day Salon in Waxahachie. He's been doing my hair for the past seven years. I'm addicted to the Brazilian Blowouts (formaldehyde and carcinogens as well) and needed my hair straightened and cut. I also got a few new feathers. Uuumm...I had NO IDEA that my first two feathers were from an ACTUAL chicken! WTF?!?!?!? The two that I had put in Saturday were synthetic. Thank God...that kind of creeped me out, as Paige would say. My hair feels so much better. Seriously, if you have thick and or wavy/curly hair and live in Texas, you need to have your hair straightened. It's a life saver. After that, I met my sister at India Palace in Dallas and had lunch. It was sooooo good! I loved the Chicken Masala and the Singapore noodles. I also had homemade cheese in Masala sauce and it was friggin delicious. After that, we went to Central Market so that I could pick up a few items for dinner. I also made a killing on wine. If you buy 6 bottles, you get 10% off. On top of that, I got 20% off of my three Texas wines and I got two bottles of Pinot Noir (Marc Cellars out of Sonoma County, CA) for $15 and a bottle of The Prisoner. I made out like a BANDIT!!!! Gary and I ended up drinking both bottles of the Marc Cellars Pinot and watched The Lincoln Lawyer. Not a bad movie; I had already read the book, but hey, it's Matthew McConaughey, so who cares if you know what's going to happen?!?!?!?

Okay, so on Sunday mornings, we either watch That Metal Show (don't pooh pooh it, it's pretty damn good and funny!) or something on the Cooking Channel. Gary loves that French chick, but yesterday, we watched Chuck's Day Off and he made cabbage rolls stuffed with lamb. Don't gross out....they looked delicious. Sooo..I was asked to make them and I did and they turned out amazingly well!!! I changed up the recipe a little - his sauce calls for Veal stock and we both said "hell no" to that and I used Napa Cabbage instead of Savoy. If you don't like Lamb, you can use the traditional beef, or even ground chicken, pork or turkey. He and I have both eaten lamb in the past and while I don't do lamb chops any more, I wasn't grossed out by ground lamb. It's surprisingly light and doesn't have the same taste as a leg of lamb or lamb chops. Here ya go:

Chuck Hughes' Lamb Stuffed Cabbage Rolls as Prepared by The Cadillac Cowgirl :)

For the Cabbage Rolls:

1 lb ground lamb
1 large onion, diced and reserve 1/2 for sauce
1/2 cup plain breadcrumbs
1 egg
1 Tbsp chopped cilantro (I know it sounds weird, but please don't omit it. It makes such a wonderful difference. I promise!!)
1 tsp grated ginger
2 garlic cloves, minced
1 tsp each salt and pepper
1 head Napa or Savoy cabbage (don't throw away pieces you don't use as you'll chop them up for the sauce)

For the Sauce:

1 24 can or bottle of San Marzano Tomato Puree
1/2 of the diced onion reserved from rolls
2 garlic cloves, minced
3-4 Tbsp olive oil (couple of turns around the pan)
2 large vine ripe tomatoes, chopped
Chopped cabbage not used for rolls
Salt and pepper to taste
Grated Parmesan cheese

Preheat your oven to 350 degrees and bring a large pot of salted water to a boil. While it comes to a boil, combine all of the ingredients for the cabbage rolls (except for the cabbage, silly!!) and set aside. Once the water starts boiling, add the whole head of cabbage and allow it to boil for 5 minutes. After 5 minutes, drain it into a colander and then submerge the head of cabbage in ice water to stop the cooking process. You want the leaves to be tender, but you don't want them to wilt and fall apart. While the cabbage leaves are chillin out, start your sauce. In a large covered skillet, heat your olive oil over high heat. When hot, turn temperature down to medium and add your onion, garlic and ginger. Allow to cook for a few minutes and then add the chopped tomatoes and San Marzano tomato puree. Stir to combine, cover and cook over medium low heat while you separate the cabbage leaves. To get the leaves ready for the lamb mixture, gently remove the core by cutting it out and let the leaves naturally fall away from the core. You should get 12-16 good size leaves from the cabbage. (Chuck used Savoy cabbage, I used Napa. My leaves were noticeably skinner than his, but worked just as well. Depending on the size of the cabbage, you may have more or less to work with.) Lay the leaves on paper towels and allow them to drain. Chop up any leftover cabbage (you should have plenty) and add to the tomato sauce. The water from the cabbage leaves should thin your sauce out a little if it starts to get too thick. If not, add water or beef broth. Check for seasonings and add salt and pepper to taste. Using between 1 and 2 tablespoons of lamb mixture (depending upon the size of the cabbage leaves), place it in the leafiest part of the cabbage, roll it up and tuck in the sides if desired, and place in a 13x9 casserole dish. Repeat until the cabbage or lamb mixture is gone...whichever comes first! Pour the tomato sauce over the rolls and bake uncovered for 50 minutes. Top with grated Parmesan cheese and serve over rice - Jasmine if you've got it!!!

Chuck did not use a tomato based sauce for the rolls - he used veal stock in place of the San Marzano puree that I used. If veal is your thing, then go for it. Gary and I both were like, "eh" and kind of unanimously vetoed it in favor of the traditional tomato sauce. I am weird about cilantro, but I kept it in the recipe and so glad I did - it added such a bright and fresh flavor without being overbearing. We have leftovers from last night and contrary to our typical eschewing of leftovers, we will eat them again tonight. I got back on Jenny Craig this morning, and I'll be running this evening. I kind of indulged this weekend...but it was in moderation. I shouted out for a hot fudge sundae many times over the course of the weekend and not once did one magically appear. Bullshit if you ask me.

OH, OH, OH, OH!!!! Did any of you see True Blood last night? Did you SEE Alcide? Did you SEE Eric??? Naked!!! Nakedness and almost full frontal. That shit ain't right!!!!

That oh, oh, oh was supposed to be about Hank, but then I remembered those naked asses last night and lost my train of thought. Hank's on tour, Hank's on tour. Praise the Lord, Hank's coming to town. We won't have to break up after all. Two nights in Ft Worth, one night in Dallas. I can stalk him in two different counties. Hell Yeah!!!

We took Eddie and Waylon to Petsmart yesterday and they acted like complete jackasses. They barked at and tried to attack the other dogs that were in there. They acted like they owned the damn place. Anyways, we bought them some new toys and took them home. Gary fed them and when he went to let Eddie out of his crate, he tried to attack Gary! WTF??? Then, they were playing with their new snake and they got into a domestic with each other. I don't know what was going on with those two, but sounds like they need to get their nuts cut. Last night during True Blood, Waylon was playing with the snake while Eddie was humping him. It takes all kinds......

I'm outta here. I've got a ton of shit to do and not a lot of time to do it. Keep it real, folks!

RE: The Newsletter Contest

Well, it sure has been an interesting week. I can't recall reading so much angst over such an insignificant issue. Yes, insignificant. There are 71 active pods in CASI, yet only two or three of them chose to participate in this contest the past couple of years. All 71 pods should have a newsletter, and I'm sure most of them do, yet only two or three participated in the newsletter contest. That clearly shows they just aren't interested. I don't know how else you could interpret that level of participation.

I got the feeling, from some writers, that CASI, by not having the contest, was telling the pods they could not longer have a pod newsletter. Nothing could be farther from the truth. The Board (at least when I was on it) encourages the pods to promote themselves, their cookoffs, and CASI through their newsletters. Whether it be electronic or hard-copy, this is how you communicate with your membership. It's why the Terlingua Trails exists. Please continue.

I got the impression from some of the writings that the Board was taking away an award without consulting the GP's. This award was not created by the GP's. Actually, it was not even created by the CASI Board. It was created by a past Director. "Technically," it had no official standing.

I read that the Board should not take away the contest at such a late date. Has your pod submitted their newsletters yet? I thought not.

I also read where the Directors where making decisions on CASI business without involving the membership. Excuse me! That is what we elected them to do. The CASI Bylaws state, "The Board of Directors is responsible for providing direction for the affairs of the organization." (Article 5.01) That's what they do. Sometimes. More or less. But that is a different subject.

Blackened Salmon Salad

I have been craving salmon for the past few weeks, so last night was the night. My husband has been craving mandarin oranges, so I married them together (for his salad) and had a divine supper last night. Super easy, quick and healthy - make it soon!!!

Cadillac Cowgirl Blackened Salmon Salad

1 lb Salmon Filet
Field Green Salad Mix
1 Carton Champagne Tomatoes
1/4 Cup Red Onion, diced
1 Cucumber, peeled and chopped
2 oz Goat Cheese, crumbled
1/4 Cup Sliced Almonds and/or Pecans
Paul Prudhomme's Salmon Seasoning
Extra Virgin Olive Oil (Eyeball it....but about 4 Tablespoons)
1 Cup Mandarin Oranges (I bought the Del Monte Fruit Cups and used one)
Salad Dressing of Choice

Liberally sprinkle your filet of salmon with Salmon Seasoning, set aside. In a non stick skillet, heat the extra virgin olive oil. When it's hot (don't let it start smoking) put the salmon in seasoned side down and let it sear on medium high heat for about 3-4 minutes. You want it to get a nice, blackened char (not burnt, but you know what I mean). Turn it over and continue to cook it at medium low heat 5 minutes per side until it is cooked through. (Salmon will turn a pale "salmon" color when it's done). When finished, set it aside to cool.

Meanwhile, in a large bowl, combine enough salad mix for two people, (I figure two cups of salad per person), the tomatoes, cucumbers, onion, almonds or pecans and the goat cheese; mix well. Divide the salad onto two plates; cut the salmon in half and lay each piece over the top of the salad. If you want mandarin oranges, drain most of the liquid from the oranges and then drizzle the remaining liquid and oranges over the salmon and the salad; otherwise, just add your dressing of choice to the salad. I used lowfat Honey Dijon; Gary used Ranch...we both ate all of our salmon and salad.

I did my Couch to 5k run/walk last night and my Brooks Trail Shoes are AMAZING!!!! My feet didn't hurt one bit afterwards. My legs weren't real happy with me, but I figure that will die down in time. I'm probably going to just walk this evening. I'm to the point that I can handle going every evening..even if it's just a brisk walk on my off days. I have serious weight to lose and I'm willing to run/walk/live on Jenny Craig until it all comes off. Not only do I want to look better, I want to feel better, too!!!

Hell Yeah!!

My day started off with being told that Mr. Jim Ezell was running for the CASI Board. Yes, Yes, Yes, Yes!!!!!!! This is fantastic news! I then read that Jenny Windsor is seeking re-election and that's awesome news as well! Let's keep the momentum going and get a few other worthy candidates to run for the BOD. Things are DEFINITELY looking up!

So, I mentioned yesterday that I wanted to comment on a post that was on the ED's blog. I'm obviously out of the loop on this whole issue, but apparently, the Board decided unilaterally to do away with the newsletter contest because the entries were not as numerous as in the past or as they had hoped. Like I said, I'm not completely up to speed on this subject, so I'm wondering, is this like a cook off where you have to have so many chilis to be sanctioned? Is there a preset number of newsletters required for this contest? Is there something else going on with the newsletter contest that would cause the Director(s) to spend more time judging less entries? As for letting the GP's decide....was it our idea to begin with and did the GP's vote to have a newsletter contest? If not, then why should the GP's now get their panties in a bunch over something they didn't vote to do in the first place. If they did, then yeah, the Board is (again) making decisions on behalf of the membership when it's not necessarily their place...

My next observation is somewhat muddled by the typos in the post that Janice submitted on her blog. Was the person stating that it's the GP's and ED's job to run CASI and the Director's jobs to run TICC? I wasn't sure and before I pissed off a lot of people, I wanted to be sure I understand what the individual was trying to communicate. If it is in fact the opinion of the person who posted the comment and that is a correct statement of the ED's job to assist the membership and GP's in running CASI and making decisions for the best of the membership, then I'm going to have to pick myself up off the floor when I get finished laughing my ass off. I'm sorry...but that's just hilarious to me. There is just minimal teamwork and communication between the membership, the ED and the GP's, so I would hope that would be something we could all work on as we elect new Directors and convene at the GPM in September. I wasn't going to go, but there is no way I'm going to miss Jim Eze1l being re-elected to the CASI Board of Directors.

It may seem that I'm trying to be inflammatory, but I'm not. I'm kind of regurgitating someone else's thoughts, agreeing with them (somewhat) and trying to figure out the deal with the Newsletter Contest. There are good people within the CASI membership ranks and they have good ideas and thoughtful comments made in the best interests of CASI. It's a shame to think that only those ideas and suggestions in line with what the Board wants to do are the ones that are acted upon. Maybe it's time to open the floor up to the GP's (more!!!) so that they can have more of a say; rather than these Board only decisions and committee recommendations that rarely make a positive impact on the membership as a whole. I recall someone telling me that when the Board and Committees were formed, they were set up with a purpose and structure in mind. It seems we've gotten away from that vision. Maybe a little bit of "Back to Basics" combined with a few "New and Improved Ideas" would be great for CASI in the future :) I'm excited by both Jim's and Jenny's announcements to run for the Board. I see great things on the horizon!

Conversations with Paige

Paige and I got to karate and went in to change her in the dressing room. We walked in and there was an older girl, a boy about Paige's age and the mom. I sat down on the bench to get Paige in her uniform.

Me: Paige, take off your shorts so you can get your pants on.
Paige: I can't. There's a boy in here.
Me: ok, well come closer to mommy and try to face the wall a little. He can't see you.

She does; and proceeds to take her shirt off like there was no problem.

Me: I thought you wanted to wait because a boy was in here.
Paige: I just didn't want him to see my booty. I don't have a problem taking my shirt off in front of boys.
Me: PAIGE!!!!!
Paige: What?? I don't do it in front of all the boys.
Me: Well, thank God for that.

I sooooo need a drink after that one! Whew!!

Howdy!!

Okay, I'm a lifelong Texan used to the very serious heat during our summers, but this is F*CKING RIDICULOUS!!!!!! I mean, seriously??? I wonder if this is going to amp up hurricane season? We learned our lesson after Katrina - we don't do disaster work anymore. I bet it also means a mild winter. That sucks. It really puts the kibosh on all of my flannel sheets, fireplace use and nesting.

Because it was too hot to do anything significant outside, we made use of our indoor time and put furniture together! Actually, I performed an exorcism on my child's room and Gary spent five hours cussing me while he put Zoe's dresser together :) Look, I was just trying to save money, so I bought the "some assembly required" furniture. Some assembly my ass. The dressers are in a 1000 pieces. Paige's bed wasn't so bad and Zoe's was simple. We are still waiting on Paige's headboard to come in and then we'll be in good shape. Gary needs to put P's dresser together, but I'm thinking I'm not going to push it.

My child is the biggest drama queen ever when it comes to house cleaning. At one point I found her in the floor, head in hands, elbows on knees sobbing violently at the prospect of cleaning her hoarder-like room. I'm not exaggerating and I'm pretty sure she's been wearing dirty undies since she has stuffed her drawers so full of clothes none of them will open. Before you get too grossed out, yes, I do laundry....she just doesn't go in and get her clean clothes. I get it, she's 7 1/2 and little kids aren't concerned with these things. But as a mother, and a clean one at that, it just really grosses me out that I could have bore a nasty kid. I may need to load some cleaning mantras onto her iPod and make her listen to them every night while she's a little sleep. A little subliminal messaging/brainwashing action. What? I could make her believe all sorts of crazy shit and if trying to brainwash her to be a clean person is the worst thing I do, then I'm doing okay!! LOL I'm kidding, people....kidding.....bwahahahahhahahaha

I made a seafood pasta dish Saturday night while my in laws were over visiting with us. It wasn't too bad. I'm going to play with it a little more before I post the recipe. It was good...but I was really ADHD with the prep and there's just no reason to subject others to that type of recipe and directions :) Yesterday I used my old faithful oven method and cooked a brisket. It came out delicious and I've decided that as long as I have an oven, beer, apple cider, Mild Bill's BBQ Rub and Head Country BBQ Sauce, I can cook one hell of a brisket!!! It may not be via a smoker, and it may not be authentic, but it's friggin good. Hell Yeah! Although I hate to give my money to Walmart, they have one of the best red skin potato salads that is ready to eat. Add a little salt and pepper and it is delicious! I have a really great potato salad recipe that I love to make, but sometimes, easy is best.

I'm keeping my iPhone. It finally stopped correcting my F Bombs and most importantly, it recognizes "Batshit Crazy" as a viable and important part of my vernacular. I'm still pissed that it doesn't have a flash, but I'll get over it.

I also need to give a HUGE shout out to the wonderful Casey at Luke's Locker in Dallas. She fitted me yesterday for a pair of Brooks Trail Running Shoes and I LOVE THEM!! The store is so cool, the people are knowledgeable and friendly and they have a huge inventory of shoes, "moisture wicking" clothing and sports bras for those of us more blessed than others....LOL!!! I'm so glad I went and the prices are comparable to all of the other sports stores - you just get the fantastic service and expertise.

I have to cut this posting short. Gary has requested that I bring floor scrapers to him so that he can finish up on a job and if my man asks for something, then by God I do it!! LOL Seriously, though....I learned a valuable lesson last week. My husband, monumental snorer, restless leg syndrome sleeper, golf cart stalker and all around redneck is the only person I would ever, ever want to be married to. Yes, I've always wanted to be married to him, but when I need someone the most, he really does have my back. I'm blessed. Infinitely blessed because of him. I wouldn't want to be in a foxhole with anyone else.

I'll be sure and comment on the today's posting on the ED Blog tomorrow. Not trying to be a DA, I just know if I don't write it down, I'll completely forget about it and I think there's something on there worth mentioning. Oooohhh....the suspense.

Back to Reality

Well....did everyone survive the 4th of July long weekend?? My God, it was hot. Hot, hot, hot. And there wasn't even a breeze. See....I knew we'd all be missing our windy weather as soon as summer cranked up!! We had the BEST time at Harvey and Carol West's place in Telephone. They put on a great cook off, tons of food, friends, laughs. Just an all around perfect weekend! Their cook off will be our 4th of July destination as long as they have it.

Today is a Xanax day. Yesterday was one as well, but I refrained. I could go on and on about my need for the Xanax, but there's really no point. I just know that I'm ready to move on from T&B Demolition and my departure date can not come soon enough. I just hope I have enough energy and "kick ass" left in me to give my all to Mild Bill's! I'm sure after a nice break from this madness and the excitement of moving Mild Bill's to Ennis, I'm going to be recharged and ready.


So, what about Casey Anthony being acquitted??? That was a weird one for me. It's like, everyone knew she did it, but the State of Florida didn't have enough concrete proof to prove her guilty beyond a reasonable doubt. There were so many loose ends that they couldn't tie together and in the end, she got off. Maybe if they had charged her with a lesser crime, they would have been able to convict her. No doubt, she's a piece of shit and let's all pray that she doesn't ever reproduce again. The jury had to convict according to certain rules, unlike the rest of us. And it may be that the jury members know she's guilty...but if the state didn't meet the burden of proof to convict her, then those opinions don't matter. It's just fucked up. No one will probably ever really know what happened to that little girl. Her mother more than likely got away with murder. Can you imagine being her attorney? Man....I don't know if I could live with myself. That's my pseudo-political rant for the day. I wonder what Nancy Grace is going to talk about now that the "tot mom" case is over?!?!?!?!?!?!


I made Vermicelli Salad this weekend for Saturday's potluck dinner at the West Compound. Below is the recipe:

Cadillac Cowgirl Vermicelli Salad

12 oz pkg Vermicelli, cooked and drained
1 Tbsp Accent
3 Tbsp Extra Virgin Olive Oil
3 Roma Tomatoes, diced
1 Bunch Green Onions, green and white parts diced
1 Yellow or Orange Bell Pepper, diced
Salt, Pepper and Parmesan Cheese

In a large bowl, combine the first six ingredients, cover and chill in the fridge for 2-4 hours. Before serving, check for seasonings and add salt and pepper to taste. Add 1/4-1/2 cup of Parmesan Cheese, mix well and serve.

This is a great meatless side, or you can add shrimp to it for a light supper!

It is my wish for the day that people will learn to use tact in their everyday conversations. I know that must sound unbelievably hypocritical and self righteous coming from me, the blogger with the big mouth and uncontrollable fingers :) It's just that when you are aware of problems with your system, and rather than give someone the benefit of the doubt from the beginning, you choose to treat them as if they are in the wrong, what does that do for relations between the different entities? I guess the apology that comes at the end is appreciated...it's just the dribble in the meantime that just doesn't do anything to improve the image of certain people.

My wish for tact also applies to people with whom you work. If you've known someone for ten years and you immediately accuse them of screwing you over; yet some jackass off the street can walk in and steal you blind, and you refuse to believe that's what happened, you've got a problem. A serious, serious fucking problem. No matter how weird and crazy my life is, I'm thankful to God for giving me common sense and the luxury of living in the real world. I don't know if I could live in some of these alternate realities that so many people function in.

Oh well...no matter how bad my day is and I might have to pop a Xanax to function, I get to go home to Lord Brignon, The Juicy of Love and Deliciousness, the Secret Lovers, Gilbert Charlie Robison and my other furry creatures out in the middle of nowhere. That alone makes up for the bullshit I deal with in the real world :)

I weigh in tomorrow.....fingers are crossed for a positive outcome. I'm still loving my Couch to 5k....and my husband that stalks me on his golf cart while drinking a beer!!!

Spreading morose bullshit in addition to joy and kindness today.......
